Ginger pickle is so very popular in Andhra cuisine that needs no introduction. Fresh ginger, spices, tamarind, and jaggery are used to make the well-known Andhra style ginger pickle known as Allam pachadi. It pairs well with other South Indian meals like Dosa, idli, ubbu roti, and curd rice, consumed especially during the winter or monsoon seasons. It has a flavor that bursts with ginger and is wonderfully balanced with spiciness, subtle tanginess, and a touch of sweetness.
